I kind of took that scene as a "don't judge a book by it's cover" thing. The older guy found the pie guy very attractive on the outside. But it turned out he was a piece of shite and a racist. On top of that, he made shite pies. He had absolutely no value as a person. Kind of the opposite from the fish guy, who was an animal on the outside, but pure in heart. At least that's how I took it.

He didn't make the pies - they were shipped in. He was just part of the franchising.

What value, exactly, did the homoesexual neighbor have? He couldn't sell his artwork, and was trying to hook up with a guy half his age. Sitting around in an apartment with a bunch of cats. I would've reacted the same way towards him in the restaurant if we were having a conversation and then he tried to grab my hand. Creepy old man.

I considered and liked that but it then seemed to get muddled by the restoration of some physical beauty (hair) by the don't judge a book by its cover character. And Michael Shannon was obviously made to be fairly grotesque. If they had stuck with your explanation throughout I would have liked it better.
