I’m not cooking today since we’re headed to my dads, but next year will likely be my year to cook and I think I’m going to try spatchcocking the turkey and throwing it on the green egg. I’ve done it with whole chickens before and they’ve come out awesome.

Currently a bit winded from starting the fire to smoke ours. At parents who keep the charcoal starter (electric so no petroleum fuel flavors) and charcoal upstairs in garage while smoker is downstairs. Smoker needed some maintenance like dumping ashes, then they thought had some charcoal downstairs but was empty bag.
Anyway, already made 5 trips up and down stairs around the house top and bottom just to get the fire started.
Now for my 1st cup of coffee today, Mom's b'day too!

We cook three. One fried, one smoked, and one baked.
We also smoke a brisket and a ham.

I was going to smoke ours. I’d already dry brined it and started getting my gravy ready when my kids all got the flu.
So now we’re not going to the parents’ at all so my brother in law had to come take the turkey.

Frying it. Its a tradition for my dad and I to drink beer outside and fry the turkey on Thanksgiving and Christmas.

I ordered mine this year. Only cook a turkey once a year so why not have someone else do it for you. Ordered it from Hannah Q's Barbq in Prairieville this year.

Brined for about 18 hours, now drying uncovered in the fridge for 4-5 hours.
After a wet brine, that extra drying time really seems to help crisp up the skin.
Roast till 150, then foil tent for about 45 minutes.
