Love Grimaldi's...just not on Sunday night

Grimaldi's is probably some of the best damned "chain" pizza out there and my family really likes the one out at the MOL. Service is always great, food is always one time, hot and delicious...
until last night
Granted, I probably should have expected things to not be as up to snuff on a Sunday evening at 7:30, but good God it was bad!
Either the waiter forgot to put in the order for my wife's pizza, or the kitchen (which had one person, who was cleaning up while working the oven at the same time) forgot to make it, but my daughter and I got our food fairly timely.
The waiter, as nice as he was, was moving with zero urgency and seemed to be clueless he had not brought all the food. To his (or the kitchen's, or the manager's) credit, we were comped her pizza without having to ask.
Still, it took asking for the check and boxes twice to finally get either.
The food was good, as always, but the service was severely lacking. No more Sunday evenings there.

You're going to avoid the place 1 day a week because of bad service? Lol.

I am just not going to make the mistake of going there on a Sunday night. It's not like I go there every day.

I have been to the original one under the Brooklyn Bridge. We walked across the bridge to get there from Manhattan. Fun thing to do if you are on vacation in NYC.

That's the one I went too, in Dumbo. I didn't know it was a chain until I saw once in Vegas last year.

There are two Grimaldi's in NYC metro. I believe the one under the Bridge is the original. It was originally opened by Patsy Grimaldi. He sold it sometime in the 90s.
From what I've heard, the new owner was more concerned with franchising the operation than running a good restaurant. His landlord wouldn't renew the lease because of bad blood at some point so he moved down the street.
Apparently the city of Brooklyn hated the new owner, too. It's illegal to open a coal burning restaurant, but existing ones are grandfathered in. The city of Brooklyn begged Patsy to come back and gave him a waiver on the coal. He opened Juliana's a few years ago.
I've been to both and think they are probably the best pizzas I ever had. I highly recommend taking the subway over there. I would support Juliana's because it's the original. Then take a nighttime walk back across the bridge into Manhattan. One of my favorite memories from my first trip to New York.
Can anyone tell me how the Baton Rouge location compares to the NYC locations? I've heard a combination of New York tap water and weather are what make the difference in the pizza doughs and bagels.

We went last night as I was coming back in from out of town and didn't feel like cooking. Arrived at 7:30. The place looked and the staff acted like we came in 5 minutes before closing (which is listed as 10PM). One waitress was going back and forth between serving her 2-3 tables and washing the windows. The bartender was already breaking down the bar and had the pile of bar mats up on counter, that's if she bothered to be behind the bar at all.
Made for a very rushed feeling and I felt like we we're "in their way" despite it still being 2+ hours from closing. Importantly, I would have easily stayed for another high-margin glass of wine but instead decided to let the employees get back to making sure they can walk out the door at 10:01PM.
