Requesting tips for cooking ponce

Ive smoked them and then seared and also seared then cooked in pot with gravy. Both good

Then just do it the same way you would do a pork gravy... sear it on all sides with some fat, take it out and throw in a lil flour to get a small roux going then cook some onion, bell pepper, celery. Put the ponce back in and add a little stock to the consistency you want your gravy and let her go for a while
