Looking for a Spoonbread Recipe

I've never made it and would like to experiment with it. I saw a recipe I liked, but apparently, I didn't save it and can't find it. There are a lot of different methods out there. Some have regular cornmeal. Some use fine ground. Some use whole milk. Some use cream and some use 1/2 and 1/2. Some use whole eggs beaten together and some use eggs separated with the whites being beaten before adding so it's like a souffle.
Brigtsen's has seafood cornbread baked in a small ramekin with a bit of compound butter on top. It's a bit more like a spoonbread than a cornbread. Thinking about doing something similar like a seafood spoonbread.

Thanks! I have a few of his books. Let me know which one it's in. I found one online called Little Veron's allegedly from Link's Real Cajun book. It has cheese in it, though, and I'm not looking for one with corn or cheese.

Cheesy Spoonbread
2 ½ C. milk
1 C. white cornmeal
1 Tablespoon butter
3 eggs, separated
1 C. shredded Cheddar cheese
1 C. chopped onion tops
2 teaspoons salt
¼ teaspoon black pepper
½ teaspoon cayenne pepper
Directions:
• Preheat oven to 375.
• Butter 8x12” baking pan
• Bring milk to boil in medium sauce pan over medium-high heat
• Whisk in cornmeal and butter, stir until smooth
• In a separate bowl, whisk egg yolks then add a small about of cornmeal mix to
temper, stir then add to the pot
• Add cheese, onions and spices until well mixed and cook for 2 minutes, stirring
constantly
• Remove from heat and set aside
• Beat egg whites to stiff peaks, then fold into cornmeal mix
• Pour into greased pan and bake uncovered for approx. 40 minutes until toothpick
comes out mostly clean. Add an additional 5-10 minutes if needed

Thanks everyone. I'll have to try some of the recipes I've found online and see if the textures are what I have in mind. Looking for something sort of similar to Brigtsen's. I may message Frank Brigtsen to see if he will share what he does. He's shared some other recipes with me before, but I hate to keep asking.
