Why doesnt Popeyes have the pulley bone

Me and my brother used to fight over the pulley bone. A spicy pulley bone would be the crown jewel of any three piece mixed.

Is it a "piece" that's cut with the oysters on it?

I googled it. So it's just the wishbone (which is the much more common name)?

If you have enough meat around the wishbone remaining to make it it's own piece, you aren't breaking down the chicken correctly.

Well, picture 1 and 3 looks like generic friend chicken thighs. Picture 2 looks like a salmon fillet.

It's "old school" butchering. Not done much, if any, now.
