How many days are you planning? Where are you flying into/out of?
I stayed at the Le Meridien in split, it was nice enough and fairly affordable. Stayed at Amfora in Hvar, it was very nice. Rented AIRBNB in Dubrovnik but there are a couple pretty nice resorts.
Just a fyi the beaches are rocky for the most part. They are beautiful but much different than the normal sandy beaches most are accustomed to. Highly suggest splurging on boats in each of the cities, that is by far the best thing you can do while there.

Into vienna then dubrovnik. I thought i saw some sandy beaches.
Can you hire a private speed boad to jump islands? Or do you mean we drive a boat that we rent?
