If you don't have a burger press, use a dinner plate with a flat bottom with a half gallon of cooking oil on top of it to weight it down on top of the patty when cooking. That will keep it from mushrooming up and being a small fat burger. You can use gallon of water or whatever. Just don't use something like a 2 liter drink. It will build pressure and go off. You can also use an aluminum pot bottom or anything else flat if you don't have a suitable plate.

Or just use a metal spatula?

OP, just watch this video

The crust doesn't seal in the juices, just FYI.

You're missing the point. Metal spatula, you can push one down, then push another down, etc. it won't keep them flat. Thus, why many restaurants use a burger press. The point is to keep it on it until you flip.
