What are advantages off Dolby cinema vs standard movie screening?

The more you pay, the less the chance you will sit next to.... people that would normally bother you in the cinema.

I could be wrong, but I think it's mainly better sound quality with better surround and all that

At least the viewing I went to in Las Vegas for Rogue One at AMC Town Square it has Dolby Atmos a giant almost IMAX screen and leather recliners.

You get the full surround sound. Speakers above your head, in front of you, behind you and from three directions on each side.
It is great for blockbusters, but not needed for comedies and dramas.
