Definitely do plan on eating dinner at Eric Ripert's Blue inside the Ritz Carlton. Eat a breakfast or two at Sunshine Grill. Calypso Grill has a great dinner on their outdoor patio.

Rum Point (45 minutes north from Georgetown)
Wreck of the 10 Sails (15 minutes east of Old Man Bay)
Calico Jacks (4 minutes north of Caribbean Club)
Heritage Kitchen (10 minutes from Seven Mile Beach): Fish tea. Coconut grouper. Oxtail soup. Conch soup. Turtle soup...
Stingray City (10 minutes from the Turtle Farm): ...but be careful, this is what it really looks like..

went there for my honeymoon. Cant recommend it enough
downtown is very touristy. I recommend doing it during the day just to see the sites. its dead at night
Agave grill is money
Calypso Grill is great
Sunshine grill for breakfast and lunch
Great carribean food for lunch as well around the island
Like others have said. rent a car, drive to rum point. go swim with the sting rays. great place
FYI Hell is a tourist trap.

I always get a rental car. Traffic is never bad.
Don't travel on a Saturday or Sunday if you can avoid it, especially leaving GC on a Saturday.
Go to Stingray Bay & Rum Point, dive & get some conchs.

Ristorante Poppagano's on the North Point is bella Italian fare and the view is stupid good, especially at sunset.
Don't eat downtown (generally) and avoid downtown on days when more than one or two cruise ships are in port.

From a native, I'd mention all those recommended above are good starts. I'd say Casa 43 - Mexican Restaurant (some of the best mexican I've had anywhere), for a friday night out Whiskey Mist/Lilies is always a good bet albeit very night club-esque. Lastly, if you wanna get a little fishing done out on the water, try Cayman Offshore Adventures or Reelistik Charters.

Went for first time lady April--stayed at the Ritz as well. You'll be offered rum punch at check in.
Hotel is nice but $450 a night for something that isn't non-inclusive? I'm glad it was a business trip.
We did three excursion type events--
1. Seven Fathoms Distillery--I can't recommend enough if you want to get hammered for $20. Essentially all you can drink rum and vodka and a really cool tour.
2. Bio-luminescent cruise at sunset--long drive around the island but worth it. Bring your own bottles of wine and you'll be out in the middle of the ocean on a small boat with a guide. He will take you to star fish point where you can get out of the boat and pick up star fish. He will also show you all sorts of constellations while out in the water. The bio luminescent bay is awesome.
3. Submarine dive--pretty cool but 30 minutes too long.
As far as eating--every one of our meals were planned for us as a large group. Great time and great shopping.
