How do I tell my wife that I don't like her gumbo?

My wife makes this "world famous" gumbo that everybody and their fricking grandma drools over but I've never been a fan. She first made it for me for our second date and I was just trying to get in her pants at that point so obviously I told her it was amazing. Fast forward 8 years and I'm at the end of my rope. I usually come up with excuses for why I don't eat much of it, like I'm not feeling well or I had a big lunch or it's ramadan but she's starting to catch on and honestly I'm tired of the charade.
What's the best way to go about this?

if you tell her this, you will suffer the consequences for years...

Induce vomiting. All nighter.
Day that you can still eat it..but she needs to make it a different way. The combo of that particular way makes you Ill.

Tell her the truth.
Then proceed to get in a huge fight where she reveals 8 years of repressed memories and opinions she has about you.

What's so bad about it?
It's way too watery and has no distinctive flavor

Divorce if you say anything now.
Trust will be broken. She will wonder what else you lie about.
STFU and eat

Divorce her or PIIHB. Those are literally your only two options.

At this point, you have to let it ride. You should have told her long ago.

Does she make a roux? Sounds like she doesn't know how.

My mom makes watery gumbo. I eat it, but not much. When she comes over, I make it the way I like it.
