FWIW, I was in Chicago last year with a real deal Chef buddy to participate in a three day eating trip. He wanted Korean BBQ and we drove an hour to get to a place that the local chef's said was the realest deal around. I don't know if it was because we were guests of the house or what but they did all the cooking. It was at the table on the little hibachi but the ladies handled it all and just put the food on our plates. Our table did look like the one in the pic with dozens of choices and was quite the experience. I haven't had Korean before or since so no idea if it is normal for the house to cook.

They specialized in bean burgers. I never ate there and only knew about it from the F&DB
