(Meant more for long range shooting), how do you go about picking your ammo?

Brand name? Read up on reviews/articles? Look at ballistic data?

Do you stick with 1 type or a few or...?

Reload.

Or buy a bunch of factory stuff, run it over a chrono, and see how it shoots.

Every gun is different, factory or custom. A custom depends on how the chamber was cut, what reamer was used. To get one hole, load your own with respect to how the chamber was cut.

For 308 federal gold medal match 168 and 175 is the standard.

A couple other really good brands are asym, prime, copper creek. There are a couple more, but I can't remember right now.

For me, ill try a few different bullets and then stick to the one that shoots the best.

For hunting ill use a different bullet.

So I guess i use 2 different ones with the target load being 99% of shooting since I've hunted like twice in the last few years

I've always shot Federal ammo and been very happy with it.

FGMM is a gold standard.

Black hills cans have some high SDs in my experience.

Prime has been putting out some stupid consistent stuff. Lots of PRS guys are shooting it.

What caliber are you shooting?

I'm shooting the Hornady ELD's 140gr out of my 6.5CM and love them. As suggested Prime is making some nice stuff. And as alway like mentioned above FGMM 175's for the 308

I used to favor 168gr and 175gr match bullets but 155gr Palmas seem to do better at range than either.

Ammo will only shoot as consistently as its capable of. The most accurate rifle in the world will shoot inconsistent ammo inconsistently. For the ultimate consistency, load it yourself, as a compromise you can purchase high quality factory ammo.

Kengel12 and Propagandalf have given really good suggestions. Once you start handloading you'll quickly see how every gun has is it's own person when it comes to what ammo it likes (or more commonly does NOT like). Just remember that once you start handloading you won't save money....but you'll shoot more (and hopefully better) for the same amount of money.
