Filets will vary in size depending on where on the loin it comes from, so a 2" filet could range from 4oz to nearly 16oz. Just like the tips you see above, they were nearly 2" thick but were 2-3oz each.

A ribeye can be ordered by thickness because ribeyes are mostly the same size diameter wise.

I know all that. That's one reason I don't get asking for ounces. For a filet, I ask for thickness and I indicate the middle of the filet if I want them more uniform which is usually the case. I don't think your instructions reflected what you really wanted. Live and learn. I have.

You can get a good look at a butchers arse by...no wait...you can tell the quality of the meat by taking a look at the butchers arse...no hold on....
