Can you explain why you would want to make a harness over running to a fuse block? Or would you do both? When I redid my boat I just ran all my wires to a fuse block. I’m curious what the harness does/where it goes in the system.

Both. You make a big fuse block and run harnesses from there to where the juice needs to go.
Do some planning and buy the appropriate multi conductor cable as well. Helps a wholeeeee lot
