What are you wanting to fish for in the deep sea? Tuna? Wahoo? Marlin? Cobia? Reef fish?

Mexican Gulf Fishing Company. Jordan, Kevin...they have a lodge y'all can stay at, and they run some awesome Freemans.

You really need more than 3 for this type of trip, 4-6 preferred.

Yeah, 5-6 is a good number on the boat. You can have a man on each side, and 3 across the back easily on most boats. Plus it splits the cost even further.
First time out, I would say do an 8 hour charter. 12 might be too long if you've never been before. Expect a little bit of time near the coast for bait fishing if using live bait. And at least an hour outbound before you start real fishing. When I went last summer, it was with a group that did either 6 or 12. We were taking my nephew, and both of my sisters husbands, and none of them had been out before. We thought 12 might be too long and opted for 6.
A general rule of thumb we go by is you can't crack a beer until there's a fish in the boat. Take plenty of beer, water, Gatorade. And pack your lunch.
Saltines and peanut butter are good if you think someone might get seasick. I usually take a Dramamine the night before. If you start getting sick on the boat, in my limited experience, taking something then is too late. You need to get it in your system early.
I'm not sure what all is in season that time of year, but should be easy for you to google. I prefer bottom fishing to trolling. But I like to eat snapper, grouper, and amberjack.
Comfortable shoes that can get soaking wet are a plus. I've seen guys in crocs, and I've seen guys in old tennis shoes. I usually wear some decent flip flops.
