Splendor is a lot of fun, not for the OP however, who's looking at big count games.
Splendor, however, is a little dry, however. I won't turn a game down, but I don't really feel I want to own it. If I'm going for a conversion engine, I'd prefer something a little more thematic or with more mechanics at play. Maybe auctioning like Keyflower.

We only played it a few times but my wife just kept asking if we could go back to playing Ticket to Ride. I think I'll give it another shot over the holidays and then maybe try and sell it if it still doesn't stick.

Some of these games mentioned, while not what I'm looking for for Christmas I will still buy for smaller groups.

If you think about it Splendor is just a super distilled TtR. Collect colors, play them for points. I'll take the map and struggle for long form completions any day of the week.
In fact the new UK/Penn maps for TtR look like just the right amount of complexity on top of it too.

Dead of Winter is a pretty intense game and also pretty challenging.

Carcasonne is $18 on amazon right now. I like splendor for its simple premise and quick play time. Very easy to introduce to people not into BG. Recommend catan, machi koro, dominion.

I just picked up Isle of Skye. It's supposedly comparable to Carcassonne, but doesn't necessarily replace it. There's an auction element to it, and different strategies are introduced. I enjoy Carcassonne as well and this sounded like a great game. Check out Rhado's run through of it.

Just came across this awesome thread.
Great job so far guys.
But question: If i'm looking for a game for 2-8 people that'll last roughly 2 hours or more, what are some good ones? Out of all the ones on here Shadows Over Camelot and Ticket To Ride seem pretty good.

That is a rough number for anything outside of a party game. Out of those:
Codenames - Really awesome
Mysterium
Dixit (Maybe)
Deception: Murder in Hong Kong
Are all pretty good.
There are some good 8 player games, Eldritch Horror and Battlestar Galactica, but those are both 4 hours long at that player count. I've never done that.
Ticket to Ride is a Must have. Consider getting it + both the 1910 Expansion (more options for US play) and the Asia Map Pack which opens it up to that 6 player count, and is a really good map to boot.
If you drop it to 2-6, and you want something strategic, Keyflower is my goto game that that level. It's probably closer to 2.5 hours, but it is super fun. Has some economics, some tile laying, and a cutthroat auction. Really good game, but a little complicated.

Formula D is a great 10 player game with simple and complex rules.
Agricola is a resource management game but it's only 5 players.
Castles of Mad King Ludwig is also great but it's only 4 players.
