I would like to make some on my smoker while I am off for the holidays. What cut of beef should I use? Any suggestions on marinades? Time and temp? Wood? Never done it before so am a little lost. An Internet search gives me millions of options

flank steak is tasty and easy
Just make sure you slice it across the grain

As for marinades etc there are hundreds to choose from

I've never done it on a smoker. I use a dehydrator but I have used eye of round or top round. You can basically marinate with all kinds of flavors. Teriyaki, soy, whatever.

Try searching on this site. We've had a thread or two with people doing it on a grill/smoker

Yes, like they said flank, brisket sliced thin ,cut across grain. Best is Deer or antelope.,marinade with
What you want it to taste like, then smoke at 225 with some kind of wood for a couple hours then put on a food dehydrator until done.

I use to top or bottom round. I marinate it in low sodium soy sauce, pepper, pineapple juice and a little crab boil. I smoke it on my egg for about 2 hours at 225 with some hickory wood. Then I finish it off in the dehydrator.
