You answered your own question.
When the Big 8 and SWC merged into the Big 12 Texas stole their rival (Oklahoma) and brought them to the South. Then voted against Nebraska (and got everyone else to do so) on league matters. Beat them in the first Big 12 title game, and continued to beat them whenever they played.
Nebraska ruled the Big 8. After entering into a conference with Texas they ruled no more.
