Can I be lazy and skip DS1 and play DS2? Also, I read something about getting help in tougher areas via some multiplayer system. Is that necessary?

There is a story, but it is not important to the gameplay. You can play the entire game without giving a whole lot of care to story.
it's a fun action rpg, just roll with it. There is a legit story to complement the game, if you're willing to look a little deeper

It can help. You have to use a human effigy if your undead and either a player online or an npc may help you out.
