And I need them for Friday for the SO and I. Freeze them? Don't freeze them?

Put in freezer for three hours. Put in fridge from there. Perfect for friday

Leave them out now so they'll REALLY be at room temp for Friday's reverse sear .. Please post pics!

They'll be a bit old, so just be sure to pour enough A-1 on them, and you'll be just fine.
