Frozen blackfin is really only good for tuna salad. Fortunately, it's really good for that. You can bake it or pan sear it with any seasoning you like, then mix it up like you would the canned stuff or chicken.

make tuna salad

cut the tuna up into 1-2" cubes
boil some water with zatarain's crab boil (more than you think you need) and salt
let it boil a while until you can easily break it up with a fork
cut fire and let soak for 15 min or so
drain it, shred it up
put tuna in a bowl, add mayo until a consistency you like (I'm not a fan of mayo so i just use a little)
cut a purple onion and add to desired amount
half some green grapes and do the same
let it chill and eat with crackers or on a sammich

If the loins are still whole it should be ok. I've blackened frozen blackfin before and it came out good.

I blacken the whole loin then slice thin and serve with wasabi mustard. Just make sure not to overcook it.

I like to smoke it lightly, then some smoked tuna salad/dip. You can make it as normal and add some softened cream cheese and just smear on a bagel too

Depending on how anal you when you freeze they are fine. I rinse in distilled water, dip in salt water made with disrlled water, shrink wrap and double bag. They hold up almost as good as fresh. About 10 months is as far as I've gone and they were still very good.

I cut into steaks and treat them just like yellowfin. I cook both just like I do my beef fillet. Dip in olive oil, salt and pepper, put skillet in grill and get grill to 600. Then about 2:30 to 3 minutes each side on the skillet. Seared and still a little pink inside.

Smoke it and make your salad, can make it into dip also. Great for tailgates and such.
