How are bison burgers from a texture/flavor stance? I've never had one before so I am curious. I have had elk and ostrich before which were different.

I find bison burgers to be really lean and hard to distinguish from ground beef honestly. I make thick patties and season with black pepper and garlic powder. I use a cast iron skillet and cook them to medium. They are very moist if you use a skillet and don't overcook them.

thanks COATER, lol not sure what happened but first attempt did not post apparently so you didn't miss it as it was never there. May stop at Whole Foods tomorrow and pick up some bison to try.
