Not very hard. Just a little tedious. I've done complete cleanings on my old yammie 90 and my father in law's yammie 70.
Biggest concerns are breaking the bowl drain bolts when tightening and/or breaking the retainer clips that hold the throttle links to each carb.
I'm in Mandeville also and if you decide to tackle the carbs and want an extra hand, let me know. I'd be glad to help.

Still having the idling issue.
I replaced the plugs and cleaned out the fuel filter.
Starts on first try and will idle for a few minutes and then just slowly ramps down and dies.
I was able to keep it idling for about 5 minutes by adjusting choke in and out as it started bogging down.
It will run if I give it some juice but as soon as i pull the lever back it cuts out.

If it's been sitting up it will need it's carburetors cleaned (or injectors if injected)
Modern gas has ethanol which (especially in two strokes) gets really gummy. My two stroke weed eaters and chain saws have this problem almost every spring (even with stabil). I would assume each carb needs a very thorough cleaning.

Bring it to a Yamaha certified mechanic bro. I had a similar problem with my 200 Johnson OceanRunner when I first got it and I fought with it for almost a year. Had a jackleg mechanic clean my carbs and didn't fix it. Brought it to a Evinrude mechanic and for $270, they properly cleaned and replaced gaskets and adjusted all the jets. Runs great now, no more dieing at idle or shifting from idle to forward or reverse like it always did.
Carbs have low idle/speed jets that need to be properly adjusted. Seems like that may be your problem. Does it die when shifting from idle to forward or reverse, or just at idle? Either way, could be the jets that need adjusting.

I think I am going to take it to gator sports in Mandeville (formerly st Tammany marine) and let them go through the motor to get a baseline.
Any idea on what kind of cost to expect? Anyone familiar with the company?

Need some advice.
Gator game me an estimate of 750 to put 2 new carb kits on.
I found a local guy who works on motors at his house who said he would do the same thing for 375.
Not sure which route to go. Really don't want to spend all most 800.

He was selling a boat with out a motor that I posted on here a few months ago. He said he has been working on them for about 15 years on the side and game me a few options to repower the boat he was selling, just did not work out. Hes been in the mandeville area for a while. I kept his number and after i got the quote from gator, i figured i would give him a call. works on boats 1 at a time at his house.

I got a quote over at aquamarine in denham for 225 + parts for a carb rebuild on my 115 Yamaha 2 stroke. 800 seems real high

Carbs need to be cleaned. Almost a given. Anytime a boat sits up is bad for the motor. Run at least once a week to keep old gas from just sitting in the carbs. I used to unplug the gas line and run it out of gas. Now I just put a little marine stabil in every tank and it works great.
Seafoam might help with the carbs but if its gummed up pretty good they will need to be taken apart for cleaning.

You can rebuild the carbs but I would try a good cleaning and soaking before that. I had a 1987 Yamaha that was doing the same and now it idols perfect.

Outboards Plus in Mandeville said he would do the whole thing for $400 parts and labor.
Seems better than the $750 Gator wanted.
