If your wife is both very naive and trusting and overly compassionate, like the kind of person that does volunteer work in soup kitchens and thinks people are generally honest, then maybe there's a small chance she's not boning the guy or about to.
But either way, she's way out of line for her reaction to you addressing it, which adds to the suspicion.
No kids? Cut bait and leave. It'll only go downhill from here.

My spouse tries to pull the same line on me. We are just friends you are jealous and jealousy is stupid I should be able to be friends with single girls and ex girlfriends blah blah blah. I don't really know what to do either.
