Smokies. Plenty to see/do if you like outdoor activities.

Small theme park, kids science museum, organized crime museum. Oaklawn racetrack has OTB, but no live racing in the summer.

Smoky's are too far. Kids would have a blast in Chattanooga. Plenty to do there - Aquarium, Rock City, Incline Railway, glass bottom boats through the cav, etc. You could also make a trip from there to the Smoky's if possible.

Get another family to pitch in and rent a luxury house for a week near Disneyworld. Houses all have private screened pools and can sleep up to 20. Depending on season, about $1500. Eat meals in and spend the money for one day at Disney and one day at Universal.

tell me more about this stone mtn. Is it a one day thing, are there other things to do in the area? Looks like a mini resort thing that gets old after a day.

I really liked Nashville and there are tons of areas around Nashville to do things for quick day trips so you don't get bored of the city.
Stone Mountain is a seen it and done type of thing. I wouldn't plan a vacation around it unless you want to do other things in the area.

Rent a cabin on one of the lakes around Hot Springs. We used to do this when I was younger and loved it.

Lake DeGray state park in Arkansas, best bang for the buck, hiking, bike rentals, snorkeling, not too far from Hotsprings so mommy can get a spa day, about 6 hours from Baton Rouge.
or
San Antonio 8 hours from Br and lots of fun parks and taco cabanas

Austin area has cool stuff for everyone. Could do Austin and San Antonio. In Austin there's an awesome natural springs swimming pool in zilker park. It's huge! Tons of parks and funky ships and restaurants for everyone. Can also go to Hamilton pool but get there very early.
San Antonio is very touristy-river walk, sea world, messican music, but entertaining nonetheless.

I would recommend going to Western NC. Spend a few days in Asheville and take the kids to Biltmore Estate. Spend a day in Waynesville to dine and shop. Then go to Boone and stay a couple days at Mast Farm Inn and do some hiking and horseback riding. Maybe a day or two on Lake Lure in a cabin or go to Nantahala and raft down the river.
So many combinations you can do in western NC over 7-9 days.
