I go for straight management if a place hasn't opened yet or is brand new (< 6wks open).
If it's been open for a while - I like to start as a bartender with the understanding of rapid advancement on the DL with upper management/ownership. Hard to fix problems if you don't get to see what's going on in the trenches.
ETA:
Athletic build and I'm fine with it. If I had big tits I'd be super dangerous.
