Stuff it with some boudin or dressing.
Dry rub and some olive oil.

Bake for 30-40 mins on 375.

Get a black pot or even a magnalite roaster. Brown the outsides then cook down to make a gravy. Serve on top of rice. My wife never had quail before meeting me and absolutely loves that meal since I first cooked it.

Other way. Slice some jalapeno peppers longways. Stick in the cavity. Sprinkle seasoning on the outside (I like Earl's (Lafayette) or Mel's (Eunice)). Wrap a slice of bacon around and stick on the Ole Smokey.

Split into halves and put into an egg/ milk bath. Heat 2 inches of oil to 350. Dredge in seasoned flour. Fry until golden. Make gravy. Feast.

brine the quail, stuff with a crawfish cornbread stuffing then slow cook on a wood fire grill basting with a spicy honey butter

Crabmeat stuffing is good too

I also soak in buttermilk and deep fry like chicken, don't over cook, drizzle with local honey after its done
