Welp, tomatoes and okra have been covered.
This gumbo thread is now complete and can be locked and anchored.

maybe the title should have been different. this isn't about tomatoes being part of the dish more than is is about tomatoes being the main focus and calling that shite mixture a roux. it's not a fricking roux. roux is 2 ingredients, not your entire mixture right after you dumped in flour. not roux and not gumbo.
This. It's not about whether you put tomatoes and okra in gumbo. That's fine. This show was about a restaurant making tomato soup with flour in it. If you saw the show, you see that it's some sort of concoction, but it's not gumbo. It may taste great but it won't taste like gumbo. However. If some of you wish to call it gumbo, go ahead.
Lawd!

We do put tomatoes in our seafood and okra gumbo ( not in chicken and Andouille ) but not in the manor described.

Look at his My New Orleans cookbook.
Tomatoes.
Maybe in his chicken and sausage gumbo. I have made it. Amazing.

Did you read how TH described the gumbo being made?
Yeah, that's a travesty. And, it isn't roux. I get all of that.
I am just responding to the tomato thing. That has come up many times here and I don't understand why it is a problem. I have eaten gumbo all my life and I like it with tomatoes and without - as long as it is good.
But, I swear, when I see people put imitation crab meat in it, I know it is nasty. You can really mess up gumbo and that is one way to do it.

That's why I said I should've used a better title. The tomato thing isn't necessarily bad, it's the whole using that as a base and calling that mixture a roux
And imitation krab is disgusting

The point is that calling it gumbo doesn't make it so.
