Hello Ms Gris, I've been way to busy with work but promise to get back on this board a bit more regular. I will have to take time to learn how to post pictures. I have been cooking up some meals that are photo worthy. I would love to meet a lot of posters here.....we need to make that happen!

Camp Gumbo I made a couple months ago. This was for a group of men so I used readily available items from the freezer.
Goose, Quail, Chicken, Venison Andoulle & Oysters:
Typical thick base Gumbo made with dark roux combined with Stock made from all poultry. Added whole quail in about an hour before finish and oysters with juice about 30 minutes before finish.
Sometimes you just put something together and it is absolutely awesome, this was one of those. Again, I promise to get more organized with recipes and pictures. Love talking food y'all.
ETA: Of course this was cooked outside in a 5 gallon cast iron pot over propane......
