Poach if you want a neutral chicken flavor, smoked of you want something with bite.

They don't have enough breast meat, I need to do a larger batch.
I can get a bunch more breasts for the same price of one of those guys.
But those are super convenient.

I'm thinking roasted.
My mom like's it with just celery, grapes, chicken and Marzetti slaw dressing.
She's really set in her ways, I'm thinking of using half a packet of ranch seasoning, onions (should I use shallot for a more mild flavor) celery, garlic, and grapes, with mayo?
I think this is the best recipe I've found on here.

Roasted or poached. Smoked is good also Just not my preferred method

Finely chopped water chestnuts blue plate mayo, diced apples, grapes, lot of fresh thyme, just a cap of white vinegar, celery, grated onion or sliced fine red onion

Put some chicken breasteses on a sheet pan, oil those breasteses up, add salt and pepper, and bake. Don't over cook it. Don't let those breasteses dry out. For the love of God, don't let those breasteses dry out.
