how can you blame coaching when godchaux has taken in the same coaching and has grasped the playbook and got his technique down quicker?

Bingo.
It's talent evaluation. On the d-line, LSU has been rapidly declining. Look at the staff for blame.
They went to So. Fla. to get Bain and North Carolina to get Gilmore. When LSU goes that far away from home to recruit guys, they should not be huge busts. Are the coaches looking at enough game film? Are they making the multiple trips to see this kids play in person?
That said, Godchaux is a rarity. Louisiana isn't churning out great DT talent, and it's hard to consistently go elsewhere to find it. LSU needs a staff that is elite in finding DTs out of state to make up for the homegrown shortage.

In general, it's the coaches job to get the most out of each player that they can.
In this case Godchaux comes off as exceptional. You can't judge the coaching based on the exceptions.
