I've never had a PNW oyster with an appealing texture or flavor. Maybe just the wrong time of year.

Odd. You can count me as a native louisianian who thinks the PNW and NE has, overall better tasting oysters. To me, they generally have a lighter, more briny taste that I like. Gulf oysters taste heavier, warmer, and more earthy. That's my opinion.
