I was given some tuna that was caught this weekend. How long can I keep it in the fridge without freezing. I am eating some tonight.

I wouldn't go more than 5 days.
Make a big batch of poke. Eat on it for days.

No 'Poe Kay' is just a raw salad, ceviche uses acid to cook the exterior of the fish, or more if marinate it long enough.

I do. So, if I vacuum seal it it will be good in the fridge until Thursday- Friday?

Is there an acid constituent in poke that effects the tuna? I've never had one that turned the yellowfin a different color. I like them way better than ceviches.

7-10 days , but obviously the quicker the better

Sure will.
If you seal it and put it in a bowl of ice it will be even better.

I've got one big loin left out of three that were given to me two Mondays ago today. It's in the bottom of the fridge and it's fine. I've been eating them since then and this one will be gone by Wed but it is still good. Fish if kept very cold will last longer than most people think and tuna is especially good at keeping longer. It's time to finish it up but i can get a couple more days and be fine.

Cool. Just finished eating some. It might be the best thing ever.

I know you think I'm messing with you because it's you, but this is entirely too long for tuna. I deal with a lot of tuna. On ice, it will not last more than a week, even in the bottom of the fridge.
