Tried to play some multi last night and it was fricking awful. Played from about 10-11 and got in maybe 2 games. It literally searched for a game for 20 minutes every time.
It's almost hard to believe how bad the match making is on the remastered edition when it was so good for ps3

I haven't had any issues since the first night. It's been taking 2 or 3 mins tops to find a game.

Yeah it sounds like it might be on your end.
You may want to try port forwarding to open up your NAT.

Yeah it happens to me as well. Sometimes, I get in a match with no problem (2-3min wait). However, the majority of the time it will just say 'searching for optimal game' and either not connect to anything, or connect to a lobby 10-15mins later...
Usually I just spam 'find game' until it connects quickly and just stay in the same lobby for awhile.
