I love the collar Peche serves. I also grew up eating catfish, but it's so prevalent in the south I don't consider it trash. Maybe I'm forgetting something, but that's not much.
Personally, I'm not as adventurous with seafood as I am with other cuisines.

I never knew a sheepshead was considered a trash fish until someone called me out on it one day. I moved from Tennessee to Orange Beach. I'd fish on the jetties at Cotton Bayou and pull in sheepshead and reds all day. I ate both. We caught a lot more sheepshead than reds, so sheepsheads were a good portion of our broke-arse diet. A few years later someone told me that sheepshead was a you-know-what fish. I just laughed it off. Sheepshead is good eatin. Not the most flavorable, but they fill your belly and taste better than catfish and tilapia.

Mullet is really good caught here in Pensacola and in Mobile Bay.

Never had heard that redfish were considered "trash" by anyone. My pops has been red fishing since as long as I can remember. But I wasn't born pre-1980 so I guess in some folks' limited perspective my voice doesn't count. Maybe you can join some of the college kids these days who force speakers whom they disagree with to cancel their speaking engagements.

Yeah, that argument didn't work for me either. But seriously, other fish have enjoyed resurgences. OBrah is just too busy eating at Satsuma or wherever to enjoy them.

Hold up, douchebag. You just asked if there were any fishes that made the transition from shite to desirable. He provides you with an example that you don't remember, then you get mad? Sounds like you're one of those college kids that didn't get their way and are now petitioning to get the post stricken from the argument. Honestly, I don't know redfish as a trash fish. Now, obviously I'd like some substantive evidence corroborating that point, but I'm not just going to get butthurt and go all ad hominem. Come on, brah. I even listed an example of Bluefin being considered shite (I have evidence) before rising in popularity. Call me out too.

I said I enjoy the collar and forgot about the cheek dish. I love both.
In fact I did make it to Satsuma this weekend. I also made it to Milkfish, and Mariza.
If you didn't have a $1500/month beer budget you might be able to eat out once in a while.

I'm a teacher, I make $1500 in like 6 months, brah.
I get out too. But I like to try new shite. I would have been excited to try the "trash fish dinner." I would have worn my best jorts. It seems adventurous. I don't see a reason to eat at the same places every week when there are so many fun and exciting places to eat here. And when someone tries something different, I'd love to try it too.

Link to where he "provided an example?" All I see in the thread is where somebody said something about Paul Prudhomme serving a lot of redfish a few decades ago. Hardly hard evidence.

I don't disagree. That's why you ask for evidence. I don't know that. You don't know that. Clearly he does. I'd be curious to see what that's all about. But, you know, I operate from a place of "I'd like to know more about this," as opposed to you and your whole, "let me talk shite about this" perspective
Honestly, I'd love to be able to drop those facts while enjoying some delectable redfish. "Did you know that in blah blah blah this was considered to be blah blah blah? Because of blah blah blah?" That's the kind of shite that people love.

My point stands that while collars and cheeks have been long considered delicacies other places, locally, it has not. This applies to many things.
Also, there was a thread somewhere a while back arguing the merits of redfish. There's definitely a contingent that consider it a throwback.

Sheephead is good eating. Just have to cook it right just like with any fish.
If you learn how to clean it right it's not that bad. It's still harder to clean than redfish, trout, etc. The only problem with sheephead is the bones and the yield issue. It takes a big sheephead to get a descent sized fillet.
At one time yellowfin tuna and bluefin tuna were considered trash fish in the US. Some of the first yellowfin tuna (when it started becoming more popular) were bought and sold at my parent's seafood dock in Venice in the early 80's. Fish company would buy fish off of our dock and sell them throughout the country. The owner had a drug problem and went bankrupt eventually. That's how my parents got into the tuna business which lasted about 25 years and closed down a few years ago.
I'm not sure how y'all can eat gafftop catfish. Those things are so slimy. I'm scared to see what my ice chest would like and all the slime it would put on the other fish. I heard it was a descent eating fish but there has never been a commercial market on them for a reason I'm sure. Just like hardhead catfish.

How local are you talking and what's your definition?
Asian places have been serving these for awhile. Not really considered a delicacy either
