Take a look at Glacier chillers. About the size and cost of a heater, but work well from what I hear.

Without reading the entire thread, did you consider some in-pool bar stools near your kitchen?
Google it if you haven't.
What lights are you going to use? Colored LED's are nice, and give you the ability to change the mood easily.
Figured out your plaster (water) color yet?
On your built in decks, make sure to put a return if at all possible. Easy place for water to get stagnate, and vacuum doesn't get up there very often to stir things up.

Pool cooling idea, almost free:
I made two "fountains" out of pvc, screwed into both returns.
It's basically a T that has holes drills in it.
I put a valve on the bottom of each to control the spray.
Measured many times, drops the temp by 4 degrees pretty consistently.
