Suggestions for Deep Fryer . . .

I'm finally dragging out a Tefal deep fryer that we've had in a cabinet for years. Has a basket and thermostat for two temps: 339 and 374 (European silliness).

So I'm debating fish (maybe thin cut catfish), shrimp or oysters. And maybe, just maybe if I'f feeling energetic, I'll give onion rings a try.

Anyway, what do you guys think? And give your techniques/recipe with your suggestions.

I lve got 40 jumbo shrimp & 2 quarts of oysters that im fryin 2morro for my old man.

Will be fried in a cast iron pot over a burner tho, like i do my white perch & opelousas cats.

Corn meal for oysters
Mix batter for skrimps

Run your fish through buttermilk, and then a 50/50 mix of fish fry and cornmeal, seasoned to taste. Fry in small batches at 350 until golden and floating. Drain on a wire rack.

i converted to just plain flour with some salt and pepper and pinch of cayenne for my fried seafood

think it tastes better and cleaner and looks more appealing.

corn meal is in my past forever.

I am about to eat some leftover catfish from last night on a poboy.

Corn meal with salt and pepper...batter them thin cut pieces of fish and poboy them babies up VOR!

Electric? I am spoiled by the gas fryer at work. The dirtier the earl. The better.
