Benchmade Mini Griptillian is hard to beat. It is my everyday carry knife. Lifetime warranty and high quality steel. There are tons of variants.
Or if you want a personalized knife (with his initials or something) you can customize a mini grip here. I made my own "Geaux Tigers" knife. I will post a picture when I'm not on my phone.

I'd say, figure out how much you want to spend prior too... If you don't want to spend more than $200-$300 at least then it would be hard to find a custom hand made knife. If you want to spend less than that then look into benchmade, spyderco etc. in the $350-$500 range you can possibly get him a Chris reeves or a randle off of knifecenter.com

If he sharpens his own knife get a steel he can work with. If not get one that's built for edge retention.
