Planning a trip to europe/Dubia....

What is the best way to plan for a trip like this?
Friend is moving to Dubai. Ill have a free place to stay so naturally I want to visit, play a little bit of golf, hit on european tourists.
Outside of my friend being there and the free accomodations, Dubai is not that interesting of a place to me.
So if I travel to Dubai I want to be sure I check out a very historical and unique place on the way. Instabul/Isreal/Italy/Greece/Egypt are all top picks.
What is the best way to go about planning for this trip? Could do the expedia sites, but I was hoping for an agency that specilizes in trips like this.

I have a friend that got back from a mission trip in Dubai this weekend.
He said it was really amazing how westernized the city was and had a good time there. He had a really great time in the city itself for what that's worth.

Every time I look up flights to Europe, the cheapest ones are always on Turkish Air through Istanbul. So my guess is this flight would be cheaper than the direct to Dubai on Emirates. So perhaps you could spend a couple days there on your way. Istanbul is a great city, and I highly recommend.
If you go to Italy, you'll want more time than just a couple days. Also, I think you'd have trouble traveling to Israel and UAE in the same trip. Maybe I'm wrong though

Dubai is a very interesting place. My Dad worked there when it started to grow until a number of years ago when Conoco left.
It's very westernized, but still tries to keep it's values. You won't be bored there. Lots of things to see and do. It's pretty much become a European vacation destination, lots of hot Euro girls. They really promote the tourism hard because of the decline in oil revenue there.

I spent part of my honeymoon in Dubai and was not overly impressed. There is not much history per se, but the architecture is amazing.
The Dubai mall is big, but there is nothing there that is not available in NYC. They even have a Shack Shake and a Magnolia Bakery (2 NYC standards).
The Burj Khalifa is cool to check out, but I recommend that you get your ticket in advance. Also, if you go to BK then you will enter through the Mall of Dubai so no need to plan two separate trips (we made that mistake).
Be sure to check if any religious holidays are occurring during your trip because the restaurants won't serve alcohol. On the same note, there are no bars in Dubai. You can only drink in the hotel restaurants. I recommend stocking up at the duty free in the airport.
Check out the Al Muntaha Bar. It is in the Burj al Arab so make sure to make reservations in advance or you won't be allowed onto the island.
Not sure of your budget, but the absolute best night of our honeymoon was at Al Maha. The place is ridiculously expensive even by OT standards ($1,600 per night), but was well worth it. We rode camels, watched a falconry exhibition, had all meals included and had dinner on the private deck of our suite. All suites have a private infinity pool. We got bumped up to a royal suite.

We did Germany, Austria, and Italy this past summer. All we planned was our flight into and out of Munich. Everything else was day-to-day. We had 4 people and it was easy to take trains to wherever and get rooms for the night. If it's just you it will more than easy to just wing it. I have no experience with Asia, but I've heard Istanbul is tons of fun.

I planned my trip to Dubai. I would check the different hotel sites to see if they have any specials. I would pick a hotel with multiple restaurants since that is the only place you can drink. Be aware that if you stay on the Palm because you will be very far from the town proper. We stayed at the following hotels and they were all really nice:
Al Maha
JZS (on the palm)
Raffles (shaped like a pyramid and close to airport)
We ate dinner at the following:
Eauzone (One and Only Hotel)
Al Mahara (crazy expensive)
We also ate at Al Maha and ordered room service our last night since we could only drink in the privacy of our room.

There is no history in Dubai. U.A>E. is only about 40 years old. They bring in some serious concert talent and in Abu Dhabi they have a Ferrari Amusement Park. Golf is expensive.
Do not take a fishing trip. Iranians have a tendency to board fishing boats.
Historically speaking, you cant do better than Jordan, although with the problems in Syria you may want to avoid it all together. Petra, Gerash and the Baptism location are all in Jordan.
Greece would be great historically as well.
Someone mentioned Crete. Its Florida times ten for Europe. Highly suggest if you are single or are going with friends. Make sure its the right time of year though.
