Open a British Air Avios accounts. Transfer your Amex points to Avios when there's a bonus (1.4:1). Now you have 112,000 Avios. Use Avios to book tickets on American Airlines domestically for as little as 7500 Avios per flight leg.
Aternatively, you can transfer your British Air Avios to Iberia Avios and fly from New York to Madrid for 34000 Avios off peak in Business Class.

I used my 100k signup bonus for 2 round trip tickets to Europe last years using the flying blue point system via KLM and Airfrance. Granted, they were economy, but still valued at over $5k as it was technically 4 one way tickets from different destinations.
If you have more points, you should be able to get round trip business class through flying blue for 50k each leg if you are flexible with dates.
UR points also transfer to flying blue.
Anybody else have some good/better travel partners getting to Spain? I am trying to plan a trip and using flying blue with similar results as posted above.

It'll take a couple steps, but if you have a schwab account, you can get their version of the Amex Platinum and transfer to an account at 1.25 cents per point. Certainly not the best redemption or "value" but if you prefer cash that's one way to go.
