Advice/tips needed for fishing for specks with plastics

I'm not much of a saltwater fisherman but thinking about making a trip to Leeville in the next couple weeks. Will be using cocahoes under a popping cork mostly but would like to have a some knowledge on fishing plastics. Any advice/tips on fishing plastics this time of year such as which baits, colors and techniques would be greatly apprecieated

Jigging plastic cocahoes on the bottom seemed to be the ticket in Venice. Think finesse fishing a worm, slow with a bit of action when you pull off the bottom. Lot of times they'd hit it on the fall.

Vary your retrieve like bass fishing until you figure out what they like. If under a cork in cool/cold weather pop it slow and let it sit, vary depths.
I like chartreuse beetle, purple and white or purple gold tail (LSU) cocahoe. White beetles also always work.
Brown Lures make a big ugly looking pink lure thaty is money for me but you got to get them online.

I would fish corkys first thing in the morning, Vudu shrimp after that, and chartreuse gulp swimming mullet for reds and flounder.

Have various paddle types. Some that paddle real hard and some that glide real easy.
I like double rigs tight line. Single under a cork

Right now, opening night H&H cocahoes are getting it done in GI. We killed em last week and headed back in the morning.

Another quick question, what size jig head do y'all recommend? Or is the wind/ current going to dictate that?

Chartreuse with red dot H&H sparkle beetle under a popping cork. If you can't catch fish with that they aren't biting.
