The Mrs. has Celiac Disease.. is there anyone with "Good" gluten free recipies?

It's been tough as hell to find anything worth a crap. The "gluten free" bread is aweful.. 80% of seasoning is out ot the question. Even a lot of canned veggies due to how they were processed/canned.... I wouldn't want to be her or wish this on anyone..
Just would like to know if anyone here has any good recipies or advice?
ETA: She's not one of these wanting to live this way because it's the going thing either. Shes stuck with this.

I have several friends who are gluten free and they all tell me the same thing .. the same methods: avoid products labeled "gluten free." Meat, vegetables, fruit .. these are all naturally gluten free thing, and they should make up the vast majority of the diet, along with rice or potatoes when craving a starch. Corn tortillas and she can still have all the mexican food she wants.
Just don't become a slave to the all-of-a-sudden million dollar industry peddling gluten free cookies, pizza crusts, ice cream, crackers, etc.

I've been eating healthier/stricter lately, and gluten free baking recipes suck, for the most part. It's really hard to find any that are decent/hold up as well as regular baked goods. Not a huge fan of coconut and almond flours. If anyone has any tips/baking secrets to share, please do tell.

What kind of seasoning are you talking about that most aren't gluten free? For breads and such try Pamela's mixes or bobs red mill. Whole foods has them or they are online. Emerils daughters have a cookbook with a lot of good recipes. We make gumbo that's very good with rice flour. Wife make pizza dough from scratch with the Pamela's. Lots if good things out there.

Yeah, they definitely suck. Even with finding recipes on Pinterest that are "GF", they're not palatable, at all. GF bread doesn't taste good either; I honestly don't know how people who are GF because it's trendy maintain it, because it sucks. I know of a GF bakery close to where I live, but I haven't tried them yet.

You would be shocked... There are a lot out there
and mostly because of manufactoring... Not so much the seasoning itself in some cases but what else the company makes.... cross contamination and depending on the severity of the disease sensitivity levels are much higher......wifes is baaaaad

If she was confirmed with a biopsy, then her GI should send her to a dietitian to be properly trained on how to eat.

My elderly mom was recently put on a diet by her gastroenterologist which eliminated wheat gluten, lactose, and several groups of carbs. Since I go by her house every day to cook her food, it was a challenge for me, too.
For her main meal, she was quite happy with meat and veggies with either brown rice,potato, or yellow corn tortilla. However, she missed bread for her morning toast and sandwiches. For breakfast, I added walnuts or a spoon of peanut butter to her steel cut oatmeal or fixed her an egg along with corn flakes. We made wraps with the corn tortillas instead of sandwiches.
One of the foods we had to eliminate was soy, which I found in most gluten-free baking mixes. Eventually I found one without soy at the health food store. Once a week I would use it to bake muffins with lots of nuts and used butter and sour cream. One of these every day satisfied some of the craving for bread, cake, cookies, etc.
Rice flour can be used to make a roux, but the texture is silkier and it scorches easily. It took practice, but eventually I perfected the technique so she could have gravy.
Other findings: roasted spaghetti squash looks like pasta on the plate, baby carrots can substitute for crackers/chips.
Honestly, once I figured all this out, it was more difficult to cook without onions and garlic as recommended on her diet than without wheat.
I think that my body is happier without many carbs or wheat-- I want to go gluten-free for awhile to see if it helps me. As long as I could have lots of roasted vegetables and salads with meat, I could be happy.

Live much longer not eating crappy old carbs.
Take a protien... cook it
Take some fresh veggies(they are cheap) cook them
Combine and enjoy. Also enjoy losing weight and having a lower chance of cancer.

Stop buying canned foods it will eliminate one source f the problems. Buy a steamer and with that simple addition to your pots and pans you now are equipped to steam fresh vegies. I figure you are already equipped to do roasting/grilling of them. I have seen only a few posters on here having an issue with the problem.
