I use paula deens house seasoning + paprika for boneless skinless breast/thighs. Put on a moderate amount, add a touch (1/4 cup) of chick broth and cover with foil. Bake at 350 for about 35 minutes. Moist and tasty.

To give some unhealthy variety, use the recipe above and when finished, top chicken with a squirt of lime juice, kraft bbq sauce, a couple slices of precooked bacon, and shredded cheese and then throw it back under the broiler. 5 minutes later, you have chilis monterey chicken. Easy peasy japaneesy!
