Dyer was average is freshman year and was only kind of good against shitty teams his sophmore year.

Well, considering Auburn had to replace 4 starting offensive linemen, lost Cam Newton, Darvin Adams, Terrell Zachery, Kodi Burns, and realistically every other offensive threat after the 2010 season, I'd say 1,242 yards, 5.1 average, and 10 touchdowns is pretty damn good.

Mississippi State: 18 carries, 150 yards, 2 touchdowns
Clemson: 16 carries, 151 yards, 2 touchdowns
South Carolina: 41 carries, 141 yards, 1 touchdowns
Arkansas: 21 carries, 112 yards, 1 touchdowns

Were the teams above considered shitty in your eyes, or something?

He struggled against Alabama, Georgia, and LSU that season, but so did the entire offense (and he was the offense, BTW). Our offensive line was notoriously bad that season and he still did awesome.

He ran for over 1000 as a freshman and for 1250 and 10 TDs as a sophomore

Of his six 100 yard games in his sophomore year, 4 came against the SEC and 1 came against Clemson.
So, in reality, he was really good his sophomore year (2nd in SEC) and had his biggest games against SEC competition

Scouts told his handlers if he didn't enroll at Louisville he would be drafted in the 5th round this year.

He'll be there for 1 Fall semester. That's plenty of time to impress the NFL scouts. I don't think the school drops you in the middle of the semester so he probably don't even need to attend classes. If he's playing well 0.00 GPA won't matter to him.
