For starters pull it off the vine as it just turns red then let it ripen in the shade outside.

I was having that problem as well. Started picking them early. Don't know why they do that

inconsistent watering causes them to grow faster than the skin.

Terrible year for me too.

Cracking like that is too much water too fast.
Plus those babies are over-ripe. They should have been picked days earlier.
I had a great crop despite the amount of rain.
I rowed up dirt around them 5 times when it's normally three due to the rain.
I fertilized 4 times, when I normally do it twice. Triple 8 twice and Miracle grow twice.
I cut tops off at 4-5 foot mark and chopped bottom 4/5 branches off as to not take up the water.
Had bumper crop.

I slowed down my watering significantly to try and stop this problem.

Caused by too much water after having too little water.

Yeah, mine are doing that too. Cut back the watering and they quit doing it for a while but now are back at it.

Spray the vine with a growth regulator called 2,4-D.

Not to hijack, but what is happening when the flowers bloom then wither and die off as the stem turns yellow?

That means you're not getting any tomatoes from that plant.
Seriously, I have no idea.
