In Texas, it's more like fishing. Hang a large baited hook above the water.
How about other states?

For recreational gator hunting FL has a draw permit system thats done in 3 phases. Getting a permit is a crapshoot and there are lots of people gaming the system. Each permit has two tags which can be used in a specific area and during a certain timeframe. Unused tags must be mailed back or you will be fined/prosecuted.
You can hunt from 30 mins before sunset until 30 mins after sunrise. No hunting during daylight hours for all intents and purposes. Harpoons, treble hooks, crossbows, etc are legal. Absolutely no hooks or snares are allowed. Firearms in the form of a bangstick are allowed only to dispatch a subdued gator although its pretty typical to see a handgun on board most hunting boats.
I've harvested a few ranging between 8.5 to 11 feet here in Florida. Its a hoot but very expensive. Tags, outfitters, processing and whatnot adds up very quickly.

large baited hook
terrible idea.
bury a stainless steel catfish hook inside of a piece of meat.
leave about 100 ft of line rolled up on a structure. suspend the meat out of the water (the higher the bigger gator). gator gets the meat and swims 100 ft. once he's that far, the meat is in his gut and THE HOOK AINT COMING OUT.
the gator does not move once you approach. BOOM TO THE EAR.

Watch swamp people, that's how we do it down here.

Is is legal if we hypothetically shoot them out of our tanks when they get in there?

We also ride around looking for bigens & snag them

We used to take chicken leg quarters and let them sit in the sun in a bucket till it made its own juice and would gag a maggot. Then take poles, make a brace and suspend the chicken above the water from a huge arse hook and close pin the line to the pole. Put about 40 feet of line coiled up on the bank.

First thing we do is get really drunk

We use a fishing pole with braided line and a ribbit frog on the end. Alligators seem to love it, an when we reel them close enough a whack with the paddle is all you need to knock them out and clean them
