seriously! especially cajun food. outside of jambalaya which I'm not a huge fan of, I love it all / gumbo, sauce piquantes, crawfish pies, boiled seafood, boiled crawfish, etc. Just don't have any knowledge or experience cooking it.

Not that hard, really. In spite of what some others may say, there are some really good cookbooks that helped me out.

Get the Rima and Richard Collin book. Seriously. Has some great classic recipes.

PP' s Louisiana Kitchen ...as good of a first or last South La. cookbook for anybody. But, cut the pepper in his jam recipes in half.
