If she wants muscle it comes from workouts. You can't do hard workouts without some complex carbs. My wife eats a lot of complex carbs. She's 5-7, 118 and with great muscle tone. It's because she has the energy to work out like a maniac. Without carbs it would be impossible.

OP, it's a good thing that you're worried about watching what you eat in front of her, but really, what she eats is her decision and what you eat is yours. She should be able to stick to her meal plans regardless of waht you're eating.

How many grams of carbs do you think you need in a day? Potatoes, sweet potatoes, and fruits will provide the carbs needed for a heavy lifting session. You don't need that much unless you're an endurance athlete training for a marathon.

You're talking about just dieting to lose weight. The OP says she wants to get tone. That means work outs. That requires carbs.

Spot on. It always amazes me how people think eating healthy means eating the same stuff over and over again. There's a lot more out there than chicken breast and steamed veggies. Explore other proteins and ways to grill, roast, and broil your meals and you've got tons of possibilities.

Back to the OP, one way that you can "support" your SO is to come up with some creative ways to serve up the ingredients she wants, and introduce some new ones along the way.

yeah my SO showed me some of the stuff on the pinterest F&DB and I immediately joined. Have 38 recipes pinned already. I told my brother about it cause he likes to cook and he told me he was already on there. I only use it for food so its not gay IMO. Its a Mecca for healthy recipes and crock pot recipes.... And baking desserts but I just skip over those lol

News flash: in 2013, every single item on your list can be found in whole-grain forms. Whole wheat pasta (and legume flour pasta) is sold at freakin' WalMart; brown rice is on offer at Piccadilly.

"Carb" and grain avoidance are the nutritional fads du jour. Give it a little time and you'll see some Paleo and gluten-free backlash emerge, just as the pendulum has swung on egg consumption, milk/dairy, and countless other "bad foods of the day" over the last 30 years of nutritional lunacy.

All tasty things in moderation...and RE: quinoa...most of the world's supply is grown in Bolivia, where escalating demand in N America has sent prices skyrocketing. It's now out of reach for the traditional peoples who used it as a staple crop: LINK ;
So the poorest of the poor are turning to cheap, processed foods far less nutritious than quinoa.
