I've seen cypress, maple, oak, boxwood hedge. I think almost any tree can be used. Looks very interesting but takes years of dedication.

Azaleas make terrific bonsai and you can easily find an old one growing in someones yard. I'd hack it down to size at least a year prior to digging to ensure it will live. Then gradually, over the course of several years, remove the rootball until it fits in the pot you want.
